Slow Cooker Beef barley soup
Great for slow cooking a big batch to freeze for later.
Delicious Beef and Barley Soup by Green Healthy Cooking
Ingredients
6 servings
- 1.5 lbs chuck roast
- 1.5 lbs potatoes peeled and cubed 1/2 inch
- 2 carrots peeled and cubed
- 1 onion diced
- 4 cloves garlic
- 2 tbsp tomato paste
- 2 tbsp better than bouillion
- 2 tsp Worcester sauce
- 1/2 tsp salt
- 1/4 tsp pepper
- 4 sprigs fresh thyme
- 2 bay leaf
- 6 cups beef broth
- 2/3 cup barley
- Option - mushrooms or other vegetables
- oil of choice
Steps/How to Make
Brown beef cubes in oil 1-2 minutes per side on med-high heat
Add beef and all ingredients to slow cooker and cook for 4-5 hours
Fill liquid to the top or check if more is require later.
