Burrata - My go to recipe for the queen of fresh cheeses 😍
BURRATA, TOMATOES, BASIL, PROSCIUTTO AND BALSAMIC VINAIGRETTE by COOKING FOR MY WIFE
Ingredients
1-2 people
- 1 burrata
- 75 g arugula
- Mixed tomatoes
- 75 g mixed toasted nuts
- 4 pcs sundried tomatoes in oil
- 1 tbsp apple cider vinegar
- 2 tbsp (raspberry) balsamic glaze
Steps / How to Make
Chop up the nuts quite finely.
Chop up sundried tomatoes and mix with the nuts to create a quick rustic pesto.
Cut up tomatoes into different shapes for different textures.
Lay arugula in the bottom of a deep plate and top with the tomatoes.
Dress with a little oil from the sundried tomatoes and apple cider vinegar (try putting your vinegar in a spray bottle to dress your salads easily)
Place Your homemade pesto mix in the middle of the plate and add the glorious burrata on the top of that. (It will be a delicious surprise hiding under there:))
Drizzle the plate with the balsamic glaze and top with some coarse salt flakes and fresh pepper.
