Broccoli Rabe and Sausage Pasta

Ingredients
- 3 tablespoons olive oil
- to taste salt and pepper
- 4 gloves garlic chopped
- 4 links spicy Italian sausage removed from casing
- 2 bunched broccoli rabe chopped into one inch pieces
- 1/2 cup shredded provolone
- 1/2 cup grated parmesan cheese
- 1 pound short pasta (orecchiette works best)
- Toasted breadcrumbs

Steps / How to Make
Boil pasta in large pot (make sure to heavily salt the pasta water). Reserve some of the pasta water prior to draining.
Heat 2 tablespoons oil in separate pot on medium heat. Add sausage and mash into crumbles. Cook sausage until slightly browned
Remove pot from heat. Using a slotted spoon, remove sausage from pan leaving the oil. Set sausage aside
Return pot to heat and add one tablespoon of oil. Add garlic and saute garlic until golden brown.
Stir broccoli rabe, salt, and pepper into pot to combine with garlic and oil
Place lid on pot and allow broccoli rabe to steam for about 8-10 min depending on how tender you like it
Once broccoli rabe is cooked, reduce heat to low and mix in sausage and cheese
Add cooked pasta to pot and combine. If dry, add some of the reserved pasta water
Top individual portions with toasted bread crumbs and a drizzle of olive oil
