Surprise Lemon Caesar Dressing
SURPRISE! There's fish sauce in this recipe. :D
The fish sauce lends that deep, pungent, complex umami and distinct anchovy flavor you get in traditional Caesar dressing. And yes - there are anchovies in your Caesar dressing. Another surprise! You like anchovies better than you thought!
And if you already knew there are anchovies in your Caesar dressing, please don't assume I underestimated your knowledge of all things Caesar dressing. I was just talking to those other people... ;)
And you can omit the lemon zest if you don't like the extra lemon flavor.
The day I took this pic, I used Romaine lettuce, carrots, broccoli, and tomatoes in my salad because that's what I had on hand. You might like to use totally different greens (like Spring Greens or arugula or spinach), or you might like to go more traditional and just do the Romaine and croutons thing.
For a quick complete meal, you could cut up the breast of a storebought rotisserie chicken and throw that on top or use some thawed precooked shrimp.

How to Make Caesar Dressing - The Basics on QVC by QVC Originals
Ingredients
4 servings
- zest of half a lemon
- 3 Tablespoons lemon juice
- 1 Tablespoon water
- 1 clove garlic grated or very finely minced
- 2-3 teaspoons fish sauce
- 2.5-3 Tablespoons mayo
- 3 Tablespoons to 1/4 cup grated Parmesan cheese
- 1/4 teaspoon black pepper
- 1/2 teaspoon sugar
- 1/4 cup olive oil
Steps/How to Make
Combine all ingredients except olive oil in a bowl and stir or whisk to thoroughly combine. Adjust seasoning if needed, then vigorously whisk or stir in olive oil.
