Slow Cooker Beef barley soup
Great for slow cooking a big batch to freeze for later.




Delicious Beef and Barley Soup by Green Healthy Cooking

Ingredients

6 servings
  • 1.5 lbs chuck roast
  • 1.5 lbs potatoes peeled and cubed 1/2 inch
  • 2 carrots peeled and cubed
  • 1 onion diced
  • 4 cloves garlic
  • 2 tbsp tomato paste
  • 2 tbsp better than bouillion
  • 2 tsp Worcester sauce
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 4 sprigs fresh thyme
  • 2 bay leaf
  • 6 cups beef broth
  • 2/3 cup barley
  • Option - mushrooms or other vegetables
  • oil of choice

Steps/How to Make

Brown beef cubes in oil 1-2 minutes per side on med-high heat


Add beef and all ingredients to slow cooker and cook for 4-5 hours


Fill liquid to the top or check if more is require later.
