Mike's EZ Chicken Fried Steak & Sides
Being an easy going Chef, I'm all about the super simple BUT delicious. Well, my culinary students got bored and hunted down exactly that in my pantries. I tell ya, this was one delicious Southern supper! It actually reminded me of the old days. Excellent imaginative shortcut work again kiddos!
Chicken Fried Steak & Country Gravy by Ken Click
Ingredients

- ● For The Meat [fried]
- 1.5 Pounds Cubed Lean Beef [4 large 1/4" thin patties]
- ● For The Flour Dredge [whisk well]
- 2 Cups AP Flour
- 1/2 Cup Panko Bread Crumbs
- 1 tsp Hot Paprika
- 1/2 tsp Cayenne Pepper
- 1 tsp Granulated Garlic Powder
- 1 tsp Granulated Onion Powder
- 1 tsp Fresh Ground Black Pepper
- 1 tsp Creole Seasoning
- 1 tbsp Dried Parsley
- ● For The Egg Coating Mixture [whisk well]
- 2 LG Egglands Best Eggs
- 1 Cup Whole Milk Or Buttermilk [more if needed]
- ● For The Sweet Corn [microwaved]
- 2 Cans Sweet Corn [fully drained]
- 2 tbsp Sweet Butter
- 1 tbsp Dried Parsley
- 1 tbsp Dried Chives
- to taste Salt
- ● For The Mashed Potatoes [microwaved]
- 2 (24 oz) Box Bob Evans Original Mashed Potatoes [great brand!]
- ● For The White Southern Gravy [whisk very well while simmering]
- 2 Packages White Country Gravy [your choice of brand]
- as needed Whole Milk Or Water [as per manufactures directions]
- ● For The Oils [as needed - just enough to fry meat]
- Vegetable Oil
- 2 tbsp Salted Butter
- ● For The Sides [as needed]
- Your Favorite Hot Sauce
- Texas Sliced Buttered Toast
- Over Easy Fried Eggs
- Instant Fried & Browned Hashbrowns
Steps/How to Make
Here's the bulk of what you'll need.
Wait for the oils to heat up well without burning your butter.
Coat your patties with your flour mixture. Dip in egg mixture and re-dip in flour. Press hard. Then place in hot oil.
Fry on both sides for 2 minutes until crispy and golden brown.
Drain on thick paper towels.
Make your white gravy as per manufactures directions. Whisk constantly while simmering.
Heat up your corn in the microwave with butter, dried parsley and salt to taste.
Microwave your potatoes and stir well half way thru.
Enjoy!
