Zucchini Boats
Really easy to make and sooo good!
ITALIAN SAUSAGE STUFFED ZUCCHINI BOATS RECIPE - Veggie Side Dishes by Fifteen Spatulas
Ingredients
- 2 large zucchini
- 1 small onion, diced
- 1 green bell pepper, diced
- 2 clove garlic, minced
- 3 tbsp Italian breadcrumbs
- 8 tbsp mozzarella cheese, shredded
- 1/4 cup Italian blend cheese, shredded
- 2 hot Italian sausages, casings removed
- 1 tsp ground black pepper
- 1 tsp paprika
- 1 tsp oregano
Steps / How to Make
Preheat oven to 400°. Cut zucchini lengthwise and scoop out seeds to make boats. Cook hot Italian sausage in frying pan.
Add onions, green bell pepper and garlic. Cook until vegetables are soft. Remove from heat. Add breadcrumbs, mozzarella cheese, pepper, paprika and oregano. Mix well.
Spray baking sheet with Pam. Fill boats with mixture in frying pan. Place boats on sprayed baking sheet.
Top with Italian cheese blend. Bake for 25 minutes. Enjoy!
