Yangzhou fried rice

Yangzhou Fried Rice - How to Make Authentic Yangzhou Chaofan (扬州炒饭) by Chinese Cooking Demystified
Ingredients
- 1 spring onion (or 1/2 yellow onion)
- 1 chinese sausage (lap cheong) (or 50 g char siu pork belly, shrimps,...)
- 50 g green peas
- 1 egg
- Rice (cooked, cold)
- 1 tbsp Shaoxing wine
- 1 tsp sesame oil
Steps / How to Make
Slice the onion in bite-size pieces and thinly slice the sausage diagonally (or cube the pork).
Heat some oil in a pan and scramble the egg
When the egg is almost cooked, add the sausages and stir fry until cooked and start caramelizing
Add the scallions and peas, and continue stir frying for 15-30 s
Add the rice and stir fry until heated through
Add the Shaoxing wine and continue stirring until the alcohol has evaporated
Add the sesame oil, stir and serve
