Growing up, my dad would always make some sort of toast for breakfast. A simple egg salad sandwich was one of his rotations. Here’s my Japanese take on it!

Ingredients
- King’s Hawaiian bread
- 2 hard boiled eggs
- Japanese kewpie mayo
Steps/How to Make
In a bowl, crush the eggs to small pieces.
Squeeze in a few tbsp of Japanese mayo. Season with salt & pepper to taste.
Cut your bread in half. Stuff the thang up, and enjoy!
Feel free to top with green onions, add in relish, mustard, tuna! The possibilities are endless.
