Nikki's Quickie Potato Pancakes
My kids were begging me to make "breakfast for dinner", particularly hash browns, but i was out of potatoes (i usually use yukon gold for most potato dishes). since i had some refrigerated hash browns i bought on sale hangin around, i figured i'd give them a try, and they came out terrific...but without the sore arm from all the peeling and grating! :-D

Ingredients

- 3 cup shredded hash browns
- 2 1/2 tbsp flour
- 2 lightly beaten eggs
- 3 tbsp melted butter
- 1 1/2 tsp water
- 1 1/2 tsp salt
- 1 tbsp vegetable oil
- 1 tbsp bacon fat (if you're health conscious just double the veggie oil)
- 1/2 cup shredded cheddar cheese (i use extra sharp), optional
Steps / How to Make
Put potatoes in strainer and drain THOROUGHLY! I use a potato masher to press down to remove as much liquid as possible.
Transfer potatoes to large bowl and add flour, eggs, melted butter, water, and salt. if you are using cheese, add that as well. mix well. i use a fork as it thoroughly combines the mixture.
Heat oil in large skillet over medium high heat. gently drop mixture, 1/3 cup at a time, into oil. do not crowd.
Fry until golden brown on both sides and drain on paper towels.
Enjoy plain or top with sour cream, ketchup, bacon bits, or whatever else you prefer. enjoy!
