Mash Potato Puffs
What to do with your leftover mashed potatoes. Nancy got this from a friend at work.
Baked Potato Puffs - Food Wishes by Food Wishes
Ingredients
- 2 Eggs
- 1/3 cup Sour cream
- 1 1/4 cup Cheddar cheese shredded
- 2 tbsp Parmesan cheese
- 2 tbsp Onion chives or onions
- 1 Salt-and-pepper to taste
- 3 cup Cold mashed potatoes
- 1/4 cup Bacon crumble
Steps / How to Make
Preheat oven to 400°F. Butter muffin cake Wells.
And medium mixing bowl whisk eggs then whisk in sour cream, mix and both cheese and onion chives. Season potatoes with salt and pepper. Add the potatoes to the egg mixture.
Spoon into muffin tin just below the top of the well.
Bake for 25 to 35 minutes until they pull away from the sides of the cup and are golden brown.
Remove and let cool for five minutes.
