Herb Roasted Chicken with Gravy

Ingredients
4-5 servings
- 1 whole chicken
- 3 tbls herbs (a mix of tarragon, rosemary, parsley, sage, thyme)
- 1 stick butter
- 1 large lemon, sliced
- Carrots
- Onions
- Chicken stock
- Flour
Steps / How to Make
Make herb butter. Mix butter with finely chopped herbs of choice.
Pat chicken dry with paper towels. Rub butter all over chicken and under the skin of the breast. Season chicken with salt and pepper.
Stuff chicken cavity with sliced lemon and chopped onion.
Place chopped onions and carrots in oven safe pan (cast iron is nice!). Place chicken on top.
Roast in oven at 375 for about 70-90 minutes until fully cooked.
Make gravy. Remove chicken from the pan and add chicken stock and bring to a simmer. Strain and return liquid to the pan. Add flour to desired thickness and add salt and pepper to taste.
