Stir Fried Pea Shoots, Shredded Dried Squid and Scrambled Egg
I used saki-ika, which I always have on hand to make an easy stir fry. It's a great side dish or drinking appetizer.

Ingredients

- 1 bag Pea shoots
- 30 grams Saki-ika (cooked and shredded dried squid)
- 1 clove Garlic
- 1 Egg
- 1 tsp Mayonnaise
- 1 tsp Oyster sauce
- 1 Salt and pepper (to taste)
Steps / How to Make
Cut the roots off the pea shoots and cut into half. Shred the saki-ika into bite sized pieces. Julienne the garlic.
Heat oil in frying pan and stir fry the garlic and saki-ika.
Add the pea shoots and stir fry.
Move the pea shoots to the side, add the egg and mayonnaise to the empty part of the frying pan, and mix together.
Mix the pea shoots and scrambled egg together. Add oyster sauce to finish, turn off the heat, and adjust the seasoning with salt and pepper.
Transfer to serving plates and it's done.
