Sweet Potato Hash
Potato Hash | Basics with Babish by Binging with Babish
Ingredients
- 2 sweet potatoes
- 1 cup shredded Brussels sprouts
- 1/2 red onion
- 1/4 green pepper
- 4 eggs
- to taste Salt & pepper
- 2 Tbsp olive oil
- 1 Tbsp minced garlic
- chopped cilantro
Steps / How to Make
Cut sweet potato into 1 inch cubes and place in a pan with 1 tbsp of oil and just enough water to cover the bottom of the pan. Salt to taste and cover. Cook over low heat until potatoes soften.
While potatoes are cooking. Dice up vegetables. Once potatoes are soft add 1 table of oil, onion, peppers, garlic and Brussels sprouts and turn up the heat to med so vegetables can cook. Season to taste.
Once vegetables begin to brown make 4 holes in the pot and crack eggs in them. Add a little water to create steam and cover until eggs are cooked but yoke is still runny. Garnish with cilantro and serve with avocado.
