Greek Rice Salad
Best Greek Rice Salad by Kitchen Divas
Ingredients
- 4 cups cooked brown rice (can be replaced with farro or orzo)
- 1/4 cup olive oil
- Juice of 1 whole lemon
- 1/4 cup fresh parsley chopped
- 1 teaspoon oregano
- 1 teaspoon dill
- 1 teaspoon salt
- 1 teaspoon fresh ground black pepper
- 20 cherry tomatoes quartered
- 4 oz crumbled feta
- 2 green onions chopped (red onions can be used as substitute for stronger onion flavor)
- 4 oz kalamata olives
Steps / How to Make
In small bowl, whisk olive oil, lemon juice, parsley, oregano, dill, salt, and pepper to create dressinf
In large bowl, combine remaining ingredients, mix in dressing, and enjoy!
Note: this dish is best served at room temperature. To eat the next day, place in microwave for 15-20 seconds
