- 3/4 cup chopped green olives with pimentos
- 3/4 cup Kalamata olives
- 3-4 tablespoons chopped garlic
- 1/2 cup chopped celery
- 1/2 cup chopped onions
- Save 3 ladles of cooked pasta water
- ca. 3/4 cup drinkable dry white wine
- 1/4 cup parmigiano cheese
Steps / How to Make
Start water for your choice of pasta, I like
Add olive oil to a hot deep fry pan followed by celery, olives, onions and capers. Cook until onions are translucent add galic. Deglaze the pan with white wine,
Add can of tomatoes. Let gently simmer covered as your water comes to boil for your pasta, make sure you salt water before you add pasta. Just before pasta is done add the 3 ladles of pasta water to sauce, then can of tuna including most of the oil from the can. Drain cooked pasta, add parmigiana cheese with cooked pasta toss and enjoy preferably with a good glass of red wine.
