Yellow curry is low on spice scale than Green, Red or Massaman curry so for all you mild spice lovers this curry is for you! It’s full of fresh ingredients, creamy, savoury with a pinch of sweetness and tastes amazing!
Thai Yellow Chicken Curry with Potatoes by

Ingredients
- 3 tablespoon yellow curry paste
- 2 chicken thighs
- 250 g coconut milk
- 250 g water
- 1 white onion
- 2 potato
- 1 carrot sliced
- 1 tsp pink salt
- 1 tsp palm sugar
Steps / How to Make
Fry the curry paste in the coconut milk till fragrant and oil of coconut start to come out.
Add chicken thigh (or any proteins) and cook to 50%
Add water and all the vegetables including potatoes.
Add salt and sugar. Cook until meat & Vegetables are done.
