Ingredients
6-8 people
- 1 cup Mayonnaise
- 1 3/4 cups velveeta cheese
- 1 can condensed cream of mushroom soup
- 2 eggs lightly beaten
- 2 cups crushed ritz crackers
- 2 tbsp. butter melted
- 2 (10 oz.) Packs of frozen chopped broccoli, thawed and drained
Steps / How to Make
Preheat oven to 350°F. Spray a 13×9in. with vegetable oil cooking spray.
In a large bowl, combine broccoli/mayonnaise/soup/1 cup cheese and eggs. Mix well.
Place mixture in prepared baking dish and smooth out.
Cover with remaining cheese
In a bowl, coat ritz crackers with melted butter (make sure it doesnt get to soggy, may have left iver butter)
Cover the casserole evenly with the buttery cracker mixture.
Cover pan with aluminum foil and bake covered for 35 min.
Remove foil, turn iven to broil and let top bown for an additional 2-3 minute.
Remove from oven, let cool for 15 min. Enjoy!
