How to Make Chicken Cacciatore - Well, my version anyway. I checked many recipes on here to see what was even in it. I got that it’s a hunters dish and there’s veg in it. I used what I had on hand and I’m kind of impressed. The majority of recipes I read didn’t have cheese in it and in my brain I’m thinking Italian and no cheese? What? The hubs wanted it so I delivered. There’s no cheese in it but I’ll add some parm shavings on mine. It’s amazingly delicious.
Chicken Cacciatore Recipe - Today I would like to share with you my Chicken Cacciatore Recipe.
Ingredients
- 6 skinless boneless thighs
- 1 onion diced
- 6 cloves garlic minced
- 1 (12 oz) jar roasted red peppers
- 1 (24 oz) jar marinara of choice
- Flour for dredging
- Olive Oil for browning thighs
- Salt pepper onion/garlic powders and Italian seasoning
- 1 tbsp sugar
- Chopped fresh parsley
- Parmesan cheese is optional
- Spaghetti noodles or pasta of choice
Steps / How to Make Chicken Cacciatore
Season and shake your chicken thighs in a ziploc bag with the flour. Brown in oil on med/high and remove from pan.
Add chopped onion to the pan adding a little oil if necessary. Add the minced garlic and then add the jar of peppers, juice and all. Season as you go.
Pour jar of marinara and seasonings into the pan. Add sugar, stir. Nestle browned chicken into sauce and cook at a simmer til done. When finished, add parsley. I served ours with spaghetti noodles, garlic bread and a salad.
